Homemade Ice Cream Sandwiches

Now that's it is starting to get warmer around here, we are all craving ice cream.  I saw this idea somewhere on Pinterest and we decided to whip some up the other day.  They turned out quite tasty and each one only has about 85 calories, which is waaaaaay less than our ice cream has!!  The sandwiches were easy enough for a three year old to make.

You'll need:
Graham crackers
Cool Whip
Sprinkles

Start by breaking the graham crackers in half and lay them out on a cookie sheet covered with wax paper (just for easier clean up).

Then add a spoonful of Cool Whip and top it with the other side of the graham cracker.

Dip the edges in sprinkles. (Sweet Girl's favorite!)

Set them on the cookie sheet and put them in the freezer for about a half an hour.  I recommend letting them sit out for a minute or two before serving just to soften a little.

Eat and enjoy!!
